CHEESE WITH IDIAZABAL-he origins and distinctive character of Idiazabal cheese are firmly rooted in nature, and are instrinsically linked to de verdant landscape of de Basque Country. In the green hills ande valleys of this agriculturally rich region, Basque shepherds have been rearing and tending latxa sheep (indigenous breeds with peculiar characteristics) in much the same way for over eight thousand years. Small and hardly, excellent transformers of pastureland and fine breeders, latxa sheep produce small quantities of very high quality milk, whic is the secret of Idiazabal chees is distinctive taste. It is an ancient farming method, whose respect for de environment has done much to preserve the great beauty of this stunning natural landscape. Compacted in a press, cheeses weigh between 1 and 3 kilos. Only pure, unpasteurised latxa milk was used in the cheese-making process. The cheese was matured for a minimum of two months. The cheese has passed physical-chemical, health and sensorial tests. Each cheese is identified with a number on its rind specifying both its origins and production characteristics.
